Aunt Toni’s Famous Pinto Bean Recipe
1 lb. of pinto beans (fresh if available)
1 tablespoon of:
Paprika
Cumin
Chili pepper
Black pepper
Liquid Smoke
Pink Hawaiian Salt
Olive Oil
3 Bay Leaves
4 cloves of Fresh Garlic (pressed)
2 Onions (dice to very small pieces)
2 Red Peppers (dice to very small pieces)
2 Green Peppers (dice to very small pieces)
Add all the above into a cooking pot with approx. 1 qtr of water
Simmer for 4 hours (add water as necessary)
After 3 hours of simmering add ½ bottle (8 ounces) of Miss Ellie’s Premium Bar-B-Q Sauce
Simmer one hour
